But is that actually true? Or is it a fear based on old information that is no longer correct? In this blog we will do a proper, simple analysis of what hydrogenated oil and trans fat really are, where they came from, why trans fat was genuinely a problem, and what changed. By the end you will understand these fats well enough to make your own decisions instead of just being scared by videos.
Where Did Hydrogenated Oil Come From? A Short History
To understand what is hydrogenated oil, we need to go back about 100 to 150 years. Foods like biscuits, cake, pastry and chocolate are originally Western foods. A century ago, these were made using animal fat. Butter is an animal fat. So is the fat from cows, buffaloes and pigs, which was collected by gently heating small pieces of meat so the fat melted out, then filtering away the solids to leave pure fat behind.
Why animal fat specifically? Because it is solid at room temperature. You cannot make a biscuit or a cake from a liquid oil. For those foods you need a solid fat to give structure. And in those days the only easily available solid fat was animal fat.
But around the year 1900, industrialisation grew and the global population rose. The demand for animal fat went up but production could not keep pace. Animal fat was also expensive and inconsistent. The world needed a solid fat that was cheap and could be produced in large, uniform quantities. That is the problem European scientists in Germany and France set out to solve.
What Is Hydrogenation and How Does It Turn Liquid Oil Into Solid Fat?
The scientists developed a unique technique that could convert liquid vegetable oil into solid fat, similar to how desi ghee is solid. They named this process hydrogenation. To understand it, you first need to understand that cooking oil is made of fatty acids, and there are three types of fatty acids.

The key difference is the double bonds. Saturated fat has no double bonds and is solid. Polyunsaturated fat, or PUFA, has many double bonds and stays liquid even in the fridge. Hydrogenation works by taking an oil that is high in PUFA, then passing hydrogen gas through it at high temperature and high pressure, using a nickel metal as a catalyst.
When the hydrogen goes in, wherever it finds a double bond, it breaks that bond and attaches a hydrogen atom there. As more and more double bonds get filled with hydrogen, the oil has more saturated fat and slowly begins to solidify. When every double bond is broken and fully filled with hydrogen, the oil becomes fully saturated. This is called fully hydrogenated oil, and it becomes extremely hard, almost like a candle.
What Is Vanaspati Ghee and Why Was Partial Hydrogenation Invented?
The hard, candle-like fully hydrogenated oil had a problem. If you tried to make a cake from it, the cake would come out as hard as a stone, and nobody wants to eat a stone-hard cake. Cakes need softness. Chocolate needs to melt in your mouth at body temperature, which is 37 degrees Celsius. Different products need different levels of hardness in their fat.
So scientists developed a modified technique. Instead of passing hydrogen gas until the oil is fully saturated, they passed it for a shorter time. This broke only some of the double bonds, so the oil solidified only partway. By controlling how long the hydrogen gas was passed, they could make fat of any hardness they wanted. This is called partial hydrogenation.

In India, this partially hydrogenated fat is commonly known as vanaspati ghee. The first commercial hydrogenated fat was launched in America in 1911 under the name Crisco. It had two big advantages: it was much cheaper than animal fat, and it was uniform and consistent every single time. Animal fat varied from animal to animal, but hydrogenated fat was always the same. Big food brands loved this because they need their products to taste identical whether you eat them today or two years from now.
The Real Problem: How Partial Hydrogenation Created Trans Fat
Here is where the actual health problem came in. The partial hydrogenation process had a side effect. When hydrogen was passed through the oil only partway, some of the remaining double bonds did not stay in their natural shape. They flipped into a different geometric shape called the trans configuration. This created a new kind of fat called trans fat.
So the fear about trans fat was completely justified when partial hydrogenation was the standard method. Old vanaspati and old bakery fats really did contain dangerous levels of trans fat. This is the origin of all the warnings you still hear today. The important question is whether those warnings still apply.
How India and the World Solved the Trans Fat Problem
Scientists developed a new method that could make fat of different hardness without producing any trans fat. The first step is full hydrogenation. You take a vegetable oil and pass hydrogen gas through it for a long time so that no double bonds remain at all. If there are no double bonds, there can be no trans fat. Fully hydrogenated oil has zero trans fat. The only problem is that it is candle-hard.
So the next step is to take this fully hydrogenated hard fat, heat it, and blend it with liquid oil to adjust the hardness. A small chemical process is used to help the solid and liquid mix together properly. This process is called interesterification. Through interesterification, manufacturers can create fat of any hardness they need, with zero trans fat.
The World Health Organization then gave countries two options. The first option was to ban the partial hydrogenation technique entirely. America, Canada and Europe chose this route. The second option was to allow fat to be made by any method but require that it contain less than 2 percent trans fat. India chose this second approach.

Is Hydrogenated Oil Still Bad for Health Today?
This is the question that matters. Today the government guideline in India is clear: whether it is refined oil, hydrogenated oil, or any oil, it cannot contain more than 2 percent trans fat. Even packaged food products cannot exceed 2 percent trans fat. So the trans fat scare is largely a thing of the past.
In fact, most large companies making hydrogenated oil today make it trans fat free. There is a business reason for this. When you put a trans fat free stamp on your product, you can sell it at a higher price, while your production cost barely increases. It is the same factory and the same equipment. Pushing the process slightly further to get under 1 percent trans fat lets them charge more. So today, when social media influencers try to scare you that refined oil or hydrogenated oil contains dangerous trans fat, they are mostly working from outdated information.
So is hydrogenated oil bad for health? The honest answer is that modern trans fat free hydrogenated oil is neutral. It is neither particularly healthy nor particularly unhealthy. It is not unhealthy because its heat stability is very good.
When Is Hydrogenated Oil Actually the Right Choice?
There are situations where trans fat free hydrogenated oil is genuinely the best option. Imagine you are cooking for a community gathering or bandara where you fry pooris continuously from morning to afternoon. Which oil should you use for hours of repeated frying?
You would not use cold pressed oil, because it degrades very quickly under heat. You could use refined oil, or you could use hydrogenated oil, meaning vanaspati ghee. Vanaspati ghee holds its stability even when heated again and again for hours. So for repeated, sustained high heat frying, hydrogenated oil is actually one of the better choices because it does not break down easily.
On the other hand, if you want fat for nutrition, the best option is to eat nuts and seeds directly, or use cold pressed and extra virgin oils raw as a dressing. Those give you the nutritional benefit of fat. But where you need heat transfer, cooking, or making a specific food product, refined oil or hydrogenated oil will help you because they produce a better, more stable product. This is exactly why industrial food products use them: for stability and shelf life.
The Real Problem Is Not the Fat, It Is the Glucose Load
Here is the most important point of this whole discussion. The real cause of heart attacks, high cholesterol and related problems is not the fat in these foods. Let us take a biscuit as an example. A simple biscuit recipe is roughly 60 percent maida, 20 percent sugar and 20 percent fat.
